Sauce, Glaze, or Pepper Sauce? A Quick Guide to the Panhandle Provisions Lineup

If you're new to our bottles, the lineup can look like a lot of choices at once. The good news: it sorts into three simple families, and once you know what each one is for, picking the right bottle takes about five seconds. Here's the plain-English guide.

BBQ Sauce — your everyday workhorse

This is the bottle that lives on the counter. Our BBQ sauces are built for flavor on just about everything, and they're forgiving — there's no technique to learn. Slather one on after cooking, use it as a dip, stir it into pulled pork, or mop it onto ribs and chicken as they cook.

Reach for a BBQ sauce when you want rich, balanced flavor with no fuss. Our Original is the smoky, no-heat classic that started the whole brand; from there you can climb the heat ladder into options like Starlit Jalapeño if you want a little kick.

Competition Glaze — the finisher

Glazes are where things get glossy. Our Competition Series is built with a touch more sugar so it sets into that shiny, sticky, lacquered finish you see on competition barbecue — the "how did they get it to look like that?" shine. These are finishing sauces, brushed on in the last few minutes of cooking rather than used as a dip.

Reach for a glaze when you want your food to look as good as it tastes — ribs, wings, chicken, pork. The Competition Series includes Peach Chipotle, Cherry Jalapeño, Texas Pepper Honey, and Pineapple Habanero, ranging from gentle sweet heat to serious fire.

One thing to know: because of that sugar, glazes can burn if you put them on too early over high heat. Brush them on near the end of the cook and you'll get the shine without the scorch.

Pepper Sauce — the kick

We make exactly one pepper sauce, on purpose: our Roasted Green Chile. It's not a BBQ sauce and not a glaze — it's a bright, smoky, slow-building heat you add by the dash. Think of it as the bottle that wakes other food up.

Reach for it when something needs heat and brightness: eggs, tacos, burgers, queso, or anything that's tasting a little flat. A few dashes and it comes alive.

The simplest way to remember it

  • BBQ Sauce = everyday flavor, on everything, no technique.
  • Competition Glaze = the glossy finisher, brushed on at the end.
  • Pepper Sauce = a dash of bright heat to wake food up.

Mix and match across all three and you'll never serve a boring plate again. Every bottle is made by hand, in small batches, right here in our City Cafe kitchen in Amarillo, Texas.

Flavor born in the Panhandle.
